To this must be added Sephardi dishes as well as a scree of recipes that reflect kosher interpretations of dishes from countries where Jews have settled. This culinary complexity makes eating at a cafe such as Edna's on Glenhuntly Road especially interesting. Owners Edna and Olesh ran a 270-seater restaurant in Israel and while the menu is definitely more Sephardic in that the flavours are largely Middle Eastern or Mediterranean, it's perhaps more accurately described as modern Israeli."
