Forum Restaurant Hong Kong

The Forum, arguably Hong Kong's most expensive restaurant, was founded by chef Yeung Koon Yat. His signature dish is Ah Yat Abalone. This fabulous dish (both in flavour and price) is Japanese smoked and dried abalone reconstituted in a rich stock and cooked in earthenware pots over charcoal for two days. The photos below of its preparation are taken in the restaurant's separate abalone kitchen. Another of the Forum's speciaities is a simple crisp skin chicken shown here being cooked in the traditional manner - the prepared chicken is held over a wok containing very hot oil which is ladelled over the bird. The kitchen images show it in action during a midweek lunch. The Forum has spawned a chain of Ah Yat Abalone Restaurants throughout Asia.
