Borage

Available Spring, Summer, Autumn Best during Spring, Summer, Autumn

Borage has a taste reminiscent of cucumber. The leaves are used raw while the stems are treated similarly to spinach but often removed from the final dish because of their prickly texture. The attractive blue, star shaped flowers can be used as a garnish or crystalised for use with desserts.
