On her return from Europe in 1996, Phillipa Sibley worked at Mietta's with her then husband, Donovan Cooke, before starting their own business, est est est (1997). This was followed by Luxe (1998) and Ondine (2001). All these restaurants scored 3 hats in the Age Good Food Guide. In 2004, after the closure of Ondine, she became pastry chef at Fenix and later held the same position at Circa The Prince. In 2012 she was the founding chef at the hugely popular Albert Street Food and Wine where these photographs were taken during service in April 2012.
